- 4 medium onions, chopped
- 2-3 cloves garlic, minced
- 1 large carrot, grated or sliced
- 2 28oz. cans whole tomatoes
- 1 28oz. can tomato puree
- 1 6oz can tomato paste
- 2 tsp olive oil
- 3 Tbs. soy sauce or tamari
- 1 Tbs. oregano
- 1 Tbs. basil
- 1 Tbs. chives
- 1 Tbs. parsley
- 1 tsp. marjoram
- 1 tsp. thyme
- 2 bay leaves
- 1/4 tsp. black pepper
- 1-2 tsp. sugar

Spread olive oil in bottom of large saucepan. Add soy sauce or tamari and sauté onion, garlic, and carrot on high heat for several minutes.
Add tomatoes, puree, paste, and all spices. Stir thoroughly. Turn heat to very low and simmer uncovered for at least one hour, stirring occasionally. Add sugar and simmer 10 minutes longer.
Yield: 1 Quart
Tip: The longer sauce simmers, the more flavorful it becomes.
