Chocolate - Zucchini Bread Recipe

Ingredients Directions
  • 3 eggs
  • 1 cup vegetable oil
  • 2 cups sugar
  • 1 Tbs vanilla
  • 2 cups peeled shredded zucchini (about 1 medium)
  • 2 1/2 cups all-purpose flour
  • 1/2 cup baking cocoa
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp baking powder
In large bowl beat eggs, oil, sugar, and vanilla.  Stir in zucchini.

Combine dry ingredients and add to zucchini mixture - mix well.

Pour into two greased loaf pans.  Bake at 350 degrees for 1 hour or until bread tests done.

Makes 2 loaves.
