- 2 cups cooked rice (OR 3/4 cup uncooked rice cooked in 1 1/2 cups water)
- raisins (as few or many as you wish, we usually use 1/2 cup or so)
- 2 eggs, beaten
- 1/3 cup sugar
- 1 tsp. vanilla
- 2 cups milk
- 1/2 tsp. salt

Preheat oven to 350 degrees.
Boil rice and raisins together for 25-30 minutes. Add milk and boil gently for 5 minutes until it starts to thicken.
In a medium to large casserole dish, mix eggs, sugar, and vanilla. Slowly add rice mixture stirring constantly. Sprinkle with cinnamon (optional).
Bake 40-50 minutes.
